Afelia

This dish is cooked with pork but we have used mutton instead.

Ingredients

1. Boneless mutton - 400 grams

2. Coriander leaves - 2 tsp

3. Castor sugar - 1/2 tsp

4. Olive oil - 3 tbsp

5. Large onions - 2 (sliced)

6. Salt and pepper to taste

Method

Rub the coriander powder, salt and pepper in the mutton and leave aside for 3 to 4 hours. Heat 2 tbsp of the oil in a pan and brown the mutton pieces quickly and then transfer to an ovenproof dish. Add the remaining oil to the pan and fry the onions until translucent. Stir in the fruit wine and a little salt and pepper and bring to a boil. Pour this over the mutton and cover with a lid. Bake in an oven till the mutton is tender. Serve garnished with fresh coriander. Serve with bread, a salad and few olives.
